Dippety Do DaTiny Tummy Tips, Issue #50--The best way to snack on more veggies is to DIP them in something scrumptious! In This Issue1) Simple and scrumptious dips for every day use or upcoming SUPER BOWL parties!Obviously, EVERY day is a good day to snack on veggies, but with the Super Bowl just around the corner, talking about healthy dips you can use with a veggie tray (or charcuterie board), seems timely! No recipe or kitchen equipment needed. Just stir these ingredients together… • Yogurt + salsa OR • Cottage cheese + taco seasoning mix AND A simple recipe: • Roasted Red Pepper Fiesta: Roast a few red peppers and peel off the skin (or use jarred roasted red bell peppers to speed things up!), and blend with a can of rinsed and drained white beans, garlic, and lemon juice . It’s a smoky, velvety dip that pairs well with veggies like cucumber slices, jicama, mini sweet peppers, and cherry tomatoes.
Yogurt TipsI suggest using plain, nonfat Greek yogurt for these recipes.Plain yogurt vs. Plain GREEK yogurt: The difference between the two is basically the water content. If you substitute plain yogurt for plain Greek yogurt, the recipe will come out thinner, and also lower in total protein. Note: Greek yogurt (or cottage cheese) dips are much higher in protein and lower in calories than those made with sour cream. Let the dipping adventure begin!
